PREVIOUSLY PUBLISHED BUT ITS THROW BACK THURSDAY SO .........
Ever since we became Empty Nesters I have made it my mission to find different and interesting healthy food to make for Brad and me. This week it is Quinoa. Neither Brad nor I can pronounce it correctly so I can only hope that I can cook it well.
I was watching Dr. Oz (Brad is not a big fan of me watching shows like that ) and quinoa was the special guest. Dr. Oz toted the health benefits of the grain as well as the great taste which of course made me want to go out and buy buckets of it ( I am truly a marketers dream)!
Several dishes were made on the show and everyone was "oohing" and "ahhing" and they smiled when they tasted the treats. I decided it was time to jump on the band wagon.
I immediately went on the computer to print out the recipes so I could make them for Brad. I decided on Blueberry Quinoa Pancakes. How bad could it be? We both love pancakes and blueberries.
This morning I served them for breakfast and guess what? Brad loved them or so he said. Me not so much (I tried to pick the blueberries out). Fortunately for Brad, I made so much he gets to have them all week. LOL
As an Empty Nester, we have both tried new foods in our never ending attempt to eat healthy. Blueberry Quinoa Pancakes gets one thumbs up and one thumbs down but that does not mean I have given up. I think I saw a recipe for broccoli and quinoa.
I will have to bribe Brad with wine or chocolate. Good thing I filled our wine cooler!
